This is the easiest side dish to pair with any protein! Crispy, delicious, and always a smashing hit.
2 lbs of small yellow potatoes
1 half lemon
2 tbsp of olive oil
Salt & Pepper to taste
2 cloves of garlic
oregano, thyme or rosemary
Scrub potatoes and place in a pot. Submerge and cover with one about inch of water. Salt the water generously. Bring to a boil and let simmer for 10 - 15 minutes or until potatoes are soft. Drain and set aside to cool enough to touch. Preheat oven to 400 degrees. Coat a baking pan with parchment or tin foil. Once cool enough to touch, place potatoes on baking sheet a few inches apart. Use a pot holder or we prefer to use a 1/2 cup measuring cup to smash each potato. Once smashed, coat with olive oil and sprinkle with salt, pepper and oregano. Squeeze the lemon juice over top & flip over and repeat the same on the other side. Place in over for 20 to 15 minutes.
