This healthy spin on classic meatloaf will wow tastebuds (good enough for even the picky Jane Dudes or little ones in your life). Jacey always doubles the recipe for her fam and in order to have some leftovers for lunch.
1 lb Ground Turkey
1 tbsp Olive Oil
1/2 cup Bread Crumbs
1/4 tsp Red Pepper Flakes
1 Clove Garlic
1/2 Onion
1/2 Yellow Pepper
1/2 Red Pepper
1 Egg
Salt and Pepper to taste
Chop and sauté your onions and peppers in the olive oil on medium heat. Make sure to make them soft, but not too over cooked, because they sill continue to cook in the oven (5-8 mins). Once the veggies are going add in your garlic, red pepper flakes, salt and pepper. Once your veggies are softened. Add meat, breadcrumbs, cooked veggies, and egg into a bowl. Add more salt and pepper and blend. Once blended put meatloaf into an oven safe dish and cook in the oven at 400 degrees for about 1 hour. Or until the internal temperature reaches 165 degrees. Feel free to top it with a drizzle of ketchup or Dani's fav a ketchup balsamic mix.
