Jacey's mom has got it going on with easy to prepare roasted chicken, Greek style!
Preheat the oven to 400 degrees
1 whole chicken (5 -7 lbs)
2 tbsp olive oil (or softened butter)
2 sprigs rosemary
1 whole head of garlic (cut crosswise)
Remove the bag of chicken giblets. Rinse and pat dry the chicken and paint with with olive oil (or butter). Salt, pepper and oregano the entire chicken generously. Cut garlic in half crosswise and place inside cavity of chicken along with rosemary sprigs. Squeeze the juice of half one lemon over the entire chicken and place lemon inside cavity. Face the chicken breast side down in baking pan. Bake at 400 for approximately 20 minutes per pound or until the internal temperature reaches 165 degrees.
