What you need:
4 Cups of Chicken Broth
1 lb Carrots
1 Onion
Greek Yogurt (Sour Cream)
2 Tbsp Olive Oil
1 Tbsp of Ginger
Thyme
Salt & Pepper

Chop your carrots and onion into medium sized (1 inch) pieces, then sauté them together in your olive oil and S&P for about 5 minutes. Add your ginger and broth. Bring to a simmer for about 20 minutes. Then pulse it all up in your blender, slowly adding your yogurt or cream. Top with pumpkin seeds and thyme and ENJOY!
